Beautiful heirloom tomato & stracciatella salad

Heirloomacy x Miss Polly's Kitchen

Serves 4-5  


2 tablespoons extra-virgin olive oil
chardonnay vinegar 
1 teaspoon sugar


3 large Heirloomacy tomatoes 
1 large nectarine 
180g tub stracciatella 
2 tablespoons fresh thyme
½ cup basil leaves - roughly chopped


  1. Mix the vinegar, sugar and oil together in a small bowl. 
  2. Slice the Heirloomacy tomatoes into 1/2 cm thick slices. 
  3. Remove the pip from the nectarine, then slice it into thin wedges. 
  4. Spread the stracciatella over a platter. 
  5. Place the tomatoes and nectarines on top of the cheese. Sprinkle the thyme and basil leaves over the top. 
  6. Drizzle the dressing over the salad. 
  7. Season with salt and pepper.
