Heirloomacy x Miss Polly's Kitchen
Serves 4-5
Dressing:
2 tablespoons extra-virgin olive oil
chardonnay vinegar
1 teaspoon sugar
Salad:
3 large Heirloomacy tomatoes
1 large nectarine
180g tub stracciatella
2 tablespoons fresh thyme
½ cup basil leaves - roughly chopped
Directions:
- Mix the vinegar, sugar and oil together in a small bowl.
- Slice the Heirloomacy tomatoes into 1/2 cm thick slices.
- Remove the pip from the nectarine, then slice it into thin wedges.
- Spread the stracciatella over a platter.
- Place the tomatoes and nectarines on top of the cheese. Sprinkle the thyme and basil leaves over the top.
- Drizzle the dressing over the salad.
- Season with salt and pepper.
